Burritos De Pollo

Recipe: Burritos De Pollo


  • 2 to 3 pound fryer, cooked and boned
  • 1 medium onion, chopped

  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 4-ounce can chopped green chiles
  • 1 dozen flour tortillas
  • 1 pound Monterey ]ack cheese, shredded
  • 1 10-ounce can tomatoes
  • Salt and pepper to taste


  1. In saucepan sauté onion and garlic in oil until glazed.
  2. Add green chiles and tomatoes and bring to a boil.
  3. Lower heat and simmer for 1 hour.
  4. Add chicken and mix until meat is shredded.
  5. Season with salt and pepper.
  6. Place 1 1/2 to 2 tablespoons mixture in each flour tortilla with a generous amount of cheese.
  7. Roll tortilla.
  8. Place in greased 12 x 9 x 2-inch baking pan and cover with foil.
  9. Heat about 30 minutes at 300°.
  10. Yield: 1 dozen
