Recipe: Crabmeat Enchiladas
Ingredients
- 1 onion, chopped
- 1/2 pound Monterey ]ack cheese, shredded
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 1 dozen corn tortillas
- 2 to 2 1/2 cups milk
- Vegetable oil
- l 4-ounce can chopped green chiles, drained
- 1 7 1/2-ounce can crabmeat
- Salt and pepper to taste
Instructions
- Sauté onion in oil.
- Add flour, milk, chiles and a little cheese.
- Cook until medium thick.
- Dip each tortilla in hot oil a few seconds until limp.
- Put 1 tablespoon each of cheese, crabmeat and sauce on a tortilla and roll up.
- Place in shallow baking dish and pour remaining sauce on top.
- Bake 1O to 15 minutes at 250°
- Serves: 4
