Recipe: Crabmeat Enchiladas


  • 1 onion, chopped
  • 1/2 pound Monterey ]ack cheese, shredded

  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 1 dozen corn tortillas
  • 2 to 2 1/2 cups milk
  • Vegetable oil
  • l 4-ounce can chopped green chiles, drained
  • 1 7 1/2-ounce can crabmeat
  • Salt and pepper to taste


  1. Sauté onion in oil.
  2. Add flour, milk, chiles and a little cheese.
  3. Cook until medium thick.
  4. Dip each tortilla in hot oil a few seconds until limp.
  5. Put 1 tablespoon each of cheese, crabmeat and sauce on a tortilla and roll up.
  6. Place in shallow baking dish and pour remaining sauce on top.
  7. Bake 1O to 15 minutes at 250°
  8. Serves: 4
