Recipe: Lazy Enchiladas

Ingredients

  • 1 can tomato soup
  • 3 eggs
  • 1 teaspoon salt
  • 2 tablespoons chile powder
  • 1/2 cup grated Romano cheese
  • 1/2 cup finely sliced green onions
  • Cooking oil
  • 1 dozen fresh tortillas
  • Lettuce finely sliced
  • Instructions

    1. In blender or mixer, combine tomato soup, eggs, salt and chile powder.
    2. Prepare cheese and onions and mix together in small bowl.
    3. In large pan over medium heat, heat the oil.
    4. Start with 3 tablespoonsful and add as needed.
    5. It requires about 1 tablespoon per tortilla.
    6. Dip tortillas quickly into the soup and egg sauce, and fry 1-1/2 minutes on each side — or until egg is cooked.
    7. Remove tortilla to platter with lettuce on it, sprinkle down the middle with onion-cheese, roll up and resprinkle with same mixture.
    8. If desired these may be made ahead and kept hot in warm oven for 15 to 20 min., then transferred to their lettuce bed.
