- Set aside 1 cup of the grated cheese and the combine the “Main Ingredients”.
- For green sauce, liquify first 3 “Green Sauce ingredients” in blender; then simmer for 3 minutes in the melted butter.
- Pour 2/3 of the sauce in baking dish and distribute evenly over the bottom (use a baking dish in which 6 rolled and filled tortillas will fit in a single layer).
- Heat tortillas in ungreased frying pan over moderate heat:
- Fill each tortilla with 1/3-cup cheese mixture, roll up, and place in baking dish with edges tucked underneath.
- Pour remaining sauce over tortillas and top with: Remaining cup grated cheddar cheese
- Bake uncovered at 400° for 15-20 minutes until heated through and cheese melts.
