Recipe: Meatless Enchiladas With Sour Cream

  • 1 (10 ounce) can enchilada sauce

  • 1(16 ounce) can whole tomatoes
  • 1/3 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/4 cup cooking oil
  • 12 corn tortillas
  • 1 1/2 cups cheddar cheese, shredded
  • 1 1/2 cups sour cream


  1. In large saucepan, combine enchilada sauce, tomatoes, onion and salt; heat to boiling, stirring frequently to break up tomatoes.
  2. Lower heat and simmer.
  3. Heat oil over medium-high heat.
  4. Dip tortillas in hot oil for several seconds, then drain.
  5. Continue until all tortillas have been softened.
  6. On each tortilla, place a heaping tablespoon of sauce and sprinkle with cheese.
  7. Roll up and place, seam side down, in a shallow baking dish.
  8. Pour remaining sauce over enchiladas and sprinkle with remaining cheese.
  9. Bake at 400 degrees for 15 minutes.
  10. Spoon sour cream over enchiladas and serve hot.
  11. Serves 6
