Recipe: Salmon Fajitas


  • 1 1/4 pounds salmon, boned, skinned, cut into 1″ cubes

  • 1 onion, thinly sliced
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon fresh ginger, minced
  • 1 1/2 teaspoons hot sauce
  • 1/8 teaspoon crushed red pepper flakes
  • 4 large leaves romaine lettuce
  • 3 tomatoes, chopped
  • 6 flour tortillas, warmed
  • Garnish: sour cream


  1. In a large bowl, combine salmon, onion, lemon juice, cumin, ginger, hot sauce and chili flakes; mix Well.
  2. Cover and chill 10 minutes.
  3. Meanwhile, shred lettuce, chop tomatoes; cover and chill separately until serving time.
  4. When ready to serve, heat a large nonstick frying pan over medium-high heat.
  5. When hot, add salmon mixture.
  6. Cook, stirring often, until fish is opaque, about 6 minutes.
  7. Serve immediately in warmed tortillas and top with lettuce and tomatoes.
  8. Garnish with sour cream.
