Eggs Motul-Style – Huevos Motulenos

Recipe: Eggs Motul-Style – Huevos Motulenos

Summary: Eggs Made with Black Beans, Peas, Ham and Tortillas.

Ingredients

  • 1 1/4 cups dry black beans (8 ounces)
  • 3 cups water
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon dried epazote, crushed (optional)

  • 1 8-ounce can tomatoes, finely chopped
  • 2 tablespoons finely chopped onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne
  • Cooking oil
  • 1 10-ounce package frozen peas
  • 1 1/2 cups chopped ham
  • 8 6-inch tortillas
  • 8 eggs
  • 1/2 cup shredded monterey jack
  • cheese (2 ounces)

Instructions

  1. In large saucepan soak beans overnight in 3 cups water.
  2. (Or, bring to boiling; simmer 2 minutes. Cover and let stand 1 hour.)
  3. Do not drain.
  4. Add the 1/4 cup onion, garlic, the 1 teaspoon salt, and epazote; cook tor 2 hours or till very tender.
  5. Combine undrained tomatoes, the 2 tablespoons chopped onion, 1/2 teaspoon salt, and cayenne.
  6. Set aside.
  7. Heat 2 tablespoons cooking oil in large heavy skillet.
  8. Add beans with liquid.
  9. Mash beans in skillet.
  10. Cook, uncovered, over medium heat 3 to 5 minutes or till very thick.
  11. Cook peas according to package directions; drain.
  12. Toss with ham; cover and keep warm.
  13. Heat 1/4 inch cooking oil in another heavy skillet.
  14. Fry tortillas 20 to 40 seconds per, side or till crisp and golden.
  15. Drain on paper toweling.
  16. Spread about 1/3 cup bean mixture on each tortilla; keep warm in 300° oven.
  17. In same oil fry eggs till set.
  18. Season with salt and pepper.
  19. Place one atop each bean-covered tortilla.
  20. Sprinkle each with about 1/2 cup of the ham mixture.
  21. Spoon some tomato sauce on top.
  22. Sprinkle with cheese.
