Recipe: Fiesta Huevos Pronto

Ingredients

  • 4 frozen shredded potato patties
  • 1 (11 ounce) can Campbell’s nacho cheese soup, divided

  • 8 eggs, slightly beaten
  • 2 tablespoons milk
  • 1 cup Monterey jack cheese, shredded
  • Garnish: sliced green onions, chopped red pepper

Instructions

  1. Prepare potato patties according to package directions.
  2. Meanwhile, in 3 quart microwave-safe bowl, stir 1/2 can soup until smooth.
  3. Gradually blend in eggs.
  4. Cover with lid; microwave on HIGH 6 1/2 minutes or until eggs are nearly set, stirring 3 times during cooking.
  5. Let stand, covered, 2 minutes.
  6. Sauce:
  7. In 1 quart casserole, stir together remaining soup and milk until smooth.
  8. Cover with lid and microwave on HIGH 2 minutes or until hot, stirring once during cooking.
  9. Sprinkle 1/4 cup cheese over each cooked potato patty.
  10. Arrange eggs on top and spoon about 2 tablespoons sauce over each.
  11. Garnish as desired.
