Recipe: Scrambled Eggs with Mexican Sausage – Huevos Revueltos con Chorizo

Summary: You Can use Either Chorizo or Italian Sausage with this Mexican Recipe for Eggs

Ingredients


  • 4 ounces chorizo or Italian Sausage
  • 6 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • Dash pepper
  • 1 medium tomato, peeled, seeded, and chopped

Instructions

  1. Remove casing from sausage and crumble into an unheated 10-inch skillet.
  2. Slowly cook sausage for 15 to 20 minutes, stirring occasionally.
  3. Drain off excess fat.
  4. In a bowl beat eggs, milk, salt, and pepper with a fork.
  5. Pour egg mixture over sausage in skillet.
  6. Cook without stirring over low heat till eggs start to set on bottom and sides of pan.
  7. Lift and fold eggs with spatula so uncooked part runs to bottom.
  8. “Continue lifting and folding for 2 to 3 minutes or till eggs start to set.
  9. Fold in the chopped tomato.
  10. Continue lifting and folding 2 to 3 minutes more or till eggs are cooked through but still glossy and moist.
