Recipe: Grilled Onion Cilantro Turkey

Summary: A pungent seasoning rub of garlic, cilantro, ginger and lime makes these grilled turkey tenderloins especially flavorful.

Ingredients


  • Salt Cure (optional recipe follows)
  • 1 1/2 pounds turkey breast tenderloins
  • Onion Mixture (recipe follows)
  • Cilantro sprigs
  • Whole green onions, ends trimmed
  • Lime wedges

Instructions

  1. Prepare Salt Cure, if desired.
  2. Rinse turkey and pat dry.
  3. If desired, rub Salt Cure over turkey; place in a bowl, cover, and refrigerate for 2 to 3 hours.
  4. Then rinse turkey well with cool water and Pat dry
  5. If turkey pieces are large, cut into serving-size portions.
  6. Place each piece of turkey between 2 sheets of plastic wrap; pound meat gently and evenly with a flat-surfaced mallet until about 1/2 inch thick. (At this point, you may cover and refrigerate until next day.)
  7. Prepare Onion Mixture and rub over turkey pieces
  8. Place turkey on a lightly greased grill 4 to 6 inches above a solid bed of hot coals.
  9. Cook, turning as needed to brown evenly, until meat in thickest part is no longer pink; cut to test (7 to 9 minutes).
  10. To serve, garnish turkey with cilantro sprigs and onions.
  11. Serve with lime wedges.
  12. Makes 6 servings.
  13. Salt Cure:
  14. Mix 1 tablespoon salt and 1 1/2 teaspoons sugar.
  15. Onion Mixture:
  16. In a small bowl, mix 1/4 cup thinly sliced green onions; 2 tablespoons minced cilantro; 3 cloves garlic, pressed or minced; 1 tablespoon minced fresh ginger; 1 teaspoon each coarsely ground pepper and grated lime peel.


Quick notes

To increase the meat’s succulence, “cure” it for a few hours with a mixture of salt and sugar.
