Recipe: Meat Loaf Mexicana


  • 1 1/2 pounds lean, fat-trimmed ground beef round
  • 10 3/4-ounce can undiluted tomato soup
  • 3 tablespoons water

  • 2 teaspoons oregano or Italian Seasoning
  • 2 teaspoons chili powder
  • 1 teaspoon cumin (optional)
  • 2 egg whites
  • 1 onion, finely chopped
  • 1 teaspoon garlic salt
  • 1 green bell pepper, finely chopped


  1. Combine soup, water, oregano, chili powder, and cumin.
  2. Measure out l/2 cup.
  3. Combine the 1/2 cup soup mixture with all remaining ingredients.
  4. Shape into a loaf in a shallow roasting pan.
  5. Pour on the remaining soup mixture.
  6. Bake in a preheated 350-degree oven for 1 hour, basting occasionally with the soup mixture in the pan.
