Recipe: Mexican Round Steak Mañana
Ingredients
- 1 pound fat-trimmed beef round or arm steak
- 1 tablespoon diet margarine
- 3 cups tomato juice
- 1 tablespoon red wine vinegar
- 3 tablespoons chopped onion
- 3 tablespoons minced celery
- 3 tablespoons minced green bell pepper
- 1 teaspoon garlic salt
- 1 teaspoon oregano or Italian seasoning
- 1/4 teaspoon cumin
- Pinch of cayenne pepper, or to taste
Instructions
- AHEAD: Brown meat in diet margarine in a nonstick skillet, turning once.
- Add remaining ingredients; cover and simmer 1 hour or more over very low heat until tender.
- Cool and refrigerate, covered, all day or overnight.
- BEFORE DINNER: Remove from refrigerator and lift off hardened fat.
- Re-heat to simmering.
- Allow to simmer, uncovered, until liquid is reduced to a thick sauce.
