Recipe: Posole De Posada


  • 2 Tbsp. bacon dripping: or cooking oil.

  • 2 bay leaves.
  • 1/2 cup white wine
  • 1 large onion, chopped
  • 1/2 cup water
  • 3 cloves garlic, minced
  • 1 (No. 10) can white hominy with the juice
  • 1 1/2 lb. lean pork, cubed
  • 1 1/2 tsp. dried oregano
  • 1 cup green chile, chopped
  • 2 tsp. cumin


  1. Heat the bacon drippings or oil in a heavy frying pan.
  2. Saute onion, garlic and cubed pork, stirring occasionally, until pork is browned.
  3. Add oregano, cumin and bay leaves.
  4. Pour the wine and water into the pan.
  5. Cover and cook for 30 minutes.
  6. Put the hominy (with the liquid) in a large pot.
  7. Add green chile and the pork mixture (with liquid).
  8. Cook over low heat for at least 1 hour.
  9. Remove bay leaves and serve in soup bowls with Red Chile Sauce on the side.
  10. Serves 10 to 12.
