Summary: Southwest Style Carne Asada


  • 4 to 5 pound Pot Roast

  • 1/4 cup OIL
  • 1 chopped Onion
  • 3 cloves Garlic, pressed
  • 1/2 cup Sherry
  • Salt And Pepper


  1. Season meat with salt and pepper, then Sear in hot oil.
  2. Add onions and garlic; cook until wilted.
  3. Sprinkle the meat with wine, turning the meat constantly.
  4. Add water, cover and cook very slowly.
  5. Repeat the wine-sprinkling until the sherry is used completely.
  6. Cook meat slowly for two hours, or until tender.
  7. Serve meat with salsa and tortillas.
