Recipe: Bean Tapatias


  • 3 cups pinto beans

  • 1 onion, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon vinegar
  • 12 corn tortillas, fried crisp
  • 1 teaspoon oregano
  • 4 cups shredded Longhorn or sharp Cheddar cheese
  • 2 tablespoons vegetable oil
  • 1-l/2 teaspoons salt
  • 1 head lettuce, shredded
  • 4 to 6 peeled green chiles
  • 1 can tomato purée


  1. Fry and mash cooked pinto beans in oil.
  2. Put a layer of mashed beans on top of each tortilla and top with cheese and lettuce.
  3. Serve warm with a sauce made of tomato purée, onion, vinegar, oregano, oil, salt and chiles.
  4. Serves: 6
