Recipe: Mexican Spoon Bread


  • 1 can (1-pound) cream-style Corn
  • 1 cup Corn Meal
  • 1/3 cup Shortening (melted)
  • 2 Eggs (beaten)
  • 1 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1 4-ounce can Green Chilis (drained and chopped)
  • 1 1/2 cups shredded Longhorn Cheese


  1. Combine first six ingredients; mix well.
  2. Pour half the batter into a greased 9 x 9 x 2-inch pan.
  3. Then sprinkle with chilis and half the cheese.
  4. Pour on remaining batter.
  5. Sprinkle with remaining cheese.
  6. Bake at 400 for 45 minutes.
  7. Coo1 l0 minutes before cutting into serving pieces.
  8. Accompany with salsa.
