Recipe: Three Kings Bread – Rosca de Reyes

  • 3 to 3 1/2 cups all-purpose flour

  • 1 package active dry yeast
  • 2/3 cup milk
  • 6 tablespoons butter or margarine
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 2 eggs
  • 2 tablespoons butter or margarine, melted
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped blanched almonds
  • 1/2 cup chopped mixed candied fruits and peels
  • 1/2 cup sifted powdered sugar
  • 1/4 teaspoon vanilla
  • Milk
  • 2 tablespoons finely chopped blanched almonds
  • Candied cherries, halved
  • Candied orange peel strips


  1. ln large mixer bowl combine 1 1/2 cups of the flour and the yeast.
  2. Heat milk, the 6 tablespoons butter, the 1/3 cup sugar, and salt till warm (115° to 120°), stirring constantly.
  3. Add to dry mixture in bowl; add eggs.
  4. Beat at low speed with electric mixer for 1/2 minute, scraping bowl constantly.
  5. Beat 3 minutes at high speed.
  6. By hand, stir in enough of the remaining 2 cups flour to make a moderately soft dough.
  7. Knead dough on lightly floured surface 8 to 10 minutes or till smooth and elastic.
  8. Place in a greased bowl; turn once to grease surtace.
  9. Cover; let dough rise in warm place 1 to 1 1/2 hours or till double.
  10. Punch down; turn out on lightly floured surface.
  11. Roll dough to a 20 x 12-inch rectangle.
  12. Brush with the 2 tablespoons melted butter.
  13. Combine the 2 tablespoons sugar and the cinnamon; toss with the 1/2 cup chopped almonds and mixed fruits and peels.
  14. Sprinkle over dough.
  15. Roll as for jelly roll, beginning at long side; seal edge.
  16. Bring ends together to form a ring and place, seam side down, on greased baking sheet; pinch ends together to seal ring.
  17. Flatten slightly.
  18. Make slashes at intervals around edge.
  19. Cover; let rise in warm place 30 to 45 minutes or till almost double.
  20. Bake in 375° oven for 25 to 30 minutes.
  21. Cool slightly.
  22. Combine powdered sugar, vanilla, and enough milk to achieve spreading consistency; spread over ring.
  23. Sprinkle with the 2 tablespoons almonds; decorate with candied cherries and orange peel.
  24. Makes 1 ring.
