Recipe: Berry Ricotta Breakfast Burritos

Summary: Fresh fruit and ricotta cheese are wrapped in flour tortillas for an extra-easy morning meal.


  • 2 flour tortillas (7 to 9-inch diameter)
  • 1/4 cup part-skim ricotta cheese or Neufchatel cheese
  • 1 cup sliced hulled strawberries or whole raspberries
  • Sugar
  • Instructions

  • Spread tortillas equally with ricotta cheese, then top equally with berries.
  • Sprinkle with sugar to taste.
  • Fold opposite sides of each tortilla over filling, then roll each from one end to enclose.
  • You may bake or microwave burritos.
  • To bake, arrange burritos, seam side down, on a nonstick baking sheet; brush lightly with water.
  • Bake in a 350° oven until filling is hot in center (5 to 8 minutes).
  • To microwave, heat one burrito at a time: set a burrito, seam side down, on a microwave-safe plate and brush lightly with water.
  • Microwave, uncovered, on HIGH (100%) for 1 to 2 minutes or until tortilla is hot to touch; check after l minute.
  • Repeat to heat remaining burrito.
  • Let burritos cool slightly before eating.
