Mexican Breakfast Tortillas

Recipe: Mexican Breakfast Tortillas


  • 4 eggs
  • 8 flour tortillas

  • 1 teaspoon salt
  • 1 tablespoon milk
  • 3 tablespoons butter
  • Diced avocado
  • Taco sauce
  • Fresh green chiles, roasted, peeled and chopped or canned chopped green chiles
  • Bacon, fried and crumbled
  • Shredded cheese


  1. Beat together eggs, salt and milk.
  2. In large frying pan, melt butter over medium heat.
  3. Dip tortillas one at a time in egg mixture; drain briefly and fry in butter until golden brown.
  4. Serve hot.
  5. Pass the condiments and allow each person to create his own dish.
  6. Serves: 4 to 6
