Summary: A Simple Mexican Omelet Recipe


  • 2 tablespoons milk
  • 2 eggs
  • 1 tablespoon scallion, chopped
  • 1 tablespoon chopped wax fresh chiles or chopped canned green chiles

  • 1 tablespoon butter or margarine
  • Salt and pepper to taste


  1. Beat eggs, milk, salt, and pepper with fork, mixing well, then add the rest of the ingredients, except butter.
  2. Heat butter or margarine in skillet; be sure that it is hot but be careful not to burn.
  3. Pour eggs into skillet, then turn heat to low.
  4. When mixture has set, lift and fold over, letting uncooked egg go to bottom of pan.
  5. Cook eggs until done (about 5 minutes).
  6. Do not overcook; eggs should be moist.
  7. Serves 1.
