Recipe: Omelet Abuelita

Summary: For an Omelet Like Grandma Used to Make!


  • 3 eggs
  • 1 tablespoon water

  • 1/2 teaspoon salt
  • 2 to 3 drops hot pepper sauce
  • 1 tablespoon chopped parsley
  • 1 tablespoon minced chives
  • 2 tablespoons melted butter
  • 3 tablespoons diced cooked bacon
  • 2 tablespoons shredded Gruyere cheese
  • Dash pepper
  • Salsa of Choice if Desired


  1. Mix eggs and water slightly; add salt, pepper, hot pepper sauce, parsley and chives.
  2. Pour butter into omelet pan and add bacon.
  3. When butter sizzles, add egg mixture and stir rapidly with a fork until mixture begins to set.
  4. Sprinkle cheese on top and lower heat.
  5. When omelet is set, loosen edges and fold over toward middle.
  6. Serve on warmed plate
  7. Serves: 1 to 2


Instead of Gruyere cheese you may use any cheese of your choice!
