Recipe: Quick Mexican Breakfast Recipe
Summary: This Breakfast recipe tastes like you are eating Chile Rellenos and a mexican omelett. You can add an endless number of items to this to make it your own.
Ingredients
- 2 Corn Tortillas
- 1 tablespoon Oil
- 2 Eggs
- 1 4 oz Can Ortega Chiles whole
- 4 slices of Onion
- 1 Diced Tomato
- 1 slice of Jack cheese
- Salt and Pepper
- Salsa
Instructions
- Fry tortillas in little oil until soft, maybe 1 min on each side, drain, place on plate
- Drain chilies, cut in long slivers and place on Tortilla’s
- Grill a few Onion slices in butter in hot pan, place on of chilies.
- Sprinkle half of Cheese on Chilies and Onions
- Fry your eggs until yolk is just set, flip once, gently break yolk, salt and pepper them.
- While eggs are cooking, microwave the tortillas until cheese melts, 30-60 seconds.
- Place eggs on top of Tortilla’s, sprinkle with remaining
- cheese, and top with tomato and salsa.
