Southwest Huevos Rancheros

Recipe: Southwest Huevos Rancheros


  • 1 pound bacon
  • 1 large onion, minced
  • 3-4 small fresh green chile peppers
  • 1 28-ounce can tomatoes, or 4-5 ripe tomatoes, minced
  • 6-12 eggs
  • Salt to taste


  1. Slice bacon in 1/2 inch squares and fry slowly until crisp.
  2. Remove bacon from skillet and sauté onion and chiles in bacon grease for 3 to 4 minutes.
  3. Add tomatoes and salt to taste.
  4. Bring to a fast boil.
  5. Add cooked bacon pieces and simmer for 5 to 10 minutes.
  6. Carefully drop eggs into sauce and poach, covered. (The eggs may also be fried in a separate skillet and covered with the sauce when served.)
  7. Serve with hot corn or flour tortillas.
  8. Yields 6 to 12 servings of Huevos Rancheros.
