  • 1/4 cup chopped green onions

  • 2 corn tortillas, cut into 1- inch squares
  • 1/2 cup vegetable stock
  • 1 tomato, chopped
  • 2 ounces chopped green chiles
  • 2 whole eggs or egg substitute
  • 4 egg whites
  • 1/4 teaspoon black pepper


  1. Saute onions and tortillas in stock until onions are tender.
  2. Add tomato and heat.
  3. Beat eggs and egg whites slightly. Add eggs, pepper, and chiles to skillet.
  4. Continue to cook, stirring until mixture is evenly cooked.
  5. Add pepper.
  6. Servings: 2
