Recipe: Tortilla Cheese Omelet

Summary: This Tortilla Cheese Omelet is Fast and Easy to Make


  • 2 teaspoons butter or margarine
  • 1/8 teaspoon salt

  • 1 tablespoon chopped green chile
  • 1/2 corn tortilla
  • 2 eggs
  • 1/4 cup shredded Monterey Jack cheese
  • 2 teaspoons water


  1. Heat 1 teaspoon butter in small frying pan or omelet pan over medium heat.
  2. When it starts to bubble, put in tortilla and heat until tortilla is limp.
  3. Remove to heated platter.
  4. Add 1 teaspoon butter to pan.
  5. Mix eggs, water, salt and chile.
  6. When butter is bubbly pour in egg mixture.
  7. Quickly tip pan, lifting edges of omelet to let egg liquid flow underneath.
  8. When firm but moist on top, place tortilla on top of eggs; top with cheese.
  9. Remove from pan and fold over.
  10. Serve with salsa or hot sauce of choice
  11. Serves: 1
