Recipe: Chicken & Tortilla Casserole


  • 3 cups cooked chicken, cubed or 6 skinless, boneless chicken breasts cubed
  • 1 (16 ounce) jar salsa verde
  • 1 cup light sour cream

  • 1/2 cup half & half
  • 12 corn tortillas
  • 4 cups (1 pound) cheddar cheese, shredded
  • 1/3 cup Parmesan cheese, grated


  1. Preheat oven to 350 degrees.
  2. Place half the chicken in a 9″ x 13″ baking pan.
  3. Spoon 1/2 of the salsa over chicken.
  4. Mix together sour cream and half & half.
  5. Mix well and pour over salsa.
  6. Cut tortillas into 1/4″ wide strips.
  7. Top sour cream mixture with half of the tortilla strips and half of the cheddar cheese.
  8. Repeat layers.
  9. Tightly cover baking pan with foil.
  10. Bake 40 minutes, remove foil and sprinkle with Parmesan cheese.
  11. Bake uncovered 5 minutes more or until cheese is golden.
  12. Let stand 10 minutes before serving.
  13. Serves 8
