Enchilada Casserole

Recipe: Enchilada Casserole


  • 1 pound ground beef
  • 1/4 cup onion, chopped
  • 1/2 teaspoon garlic
  • 1/4 teaspoon black pepper
  • 1 small can green chiles, diced
  • 1 can nacho jalapeno cheese soup
  • 1 can cream of mushroom soup
  • 9 corn tortillas
  • 1/2 cup cheddar cheese, shredded


  1. Preheat oven to 350 degrees.
  2. Brown ground beef; drain off fat.
  3. Add onion, garlic, pepper and green chiles.
  4. Cook 2 to 3 minutes.
  5. Pour both soups into meat mixture and stir until mixed.
  6. In a 9″ X 13″ casserole, layer, beginning With 3 corn tortillas, add 1/3 of the meat/soup mixture and continue until all ingredients are used.
  7. Sprinkle shredded cheese across top and bake 30 minutes.
