Recipe: Fiesta Brunch Casserole
Summary: Individual egg, bean, and sausage casseroles are a colorful choice for brunch or supper.
Ingredients
- 2 cans (about 15 oz. each) pinto beans; or 4 cups cooked (about 2 cups dried) pinto beans
- 4 ounces ground turkey sausage, crumbled
- 3 medium-size thin-skinned potatoes (about 1 lb. total), cooked, peeled, and diced
- 2 teaspoons minced fresh basil or 1/2 teaspoon dry basil
- About 1/is teaspoon pepper
- 4 large eggs
- 1/3 cup shredded Cheddar cheese
- 4 green onions, ends trimmed
- 8 warm flour tortillas
- 1 cup Salsa of your choice (optional)
Instructions
- Drain beans, reserving 1/2 cup of the liquid from cans.
- Pour half the beans into a bowl; add reserved liquid (if using home-cooked beans, add 1/2 cup low-sodium chicken broth mixed with 1 teaspoon cornstarch).
- Mash beans until fairly smooth.
- Stir in remaining beans, sausage, potatoes, basil, and 1/8 teaspoon of the pepper.
- Divide bean mixture equally among 4 shallow 2-cup casseroles.
- Set casseroles in one or two 10 by 15-inch rimmed baking pans.
- Bake in a 400° oven for about 10 minutes.
- Stir; bake for 5 more minutes, then remove from oven.
- With the back of a spoon, impress an egg-size hollow in center of bean mixture in each casserole.
- Break an egg into each hollow.
- Sprinkle cheese equally over bean mixture.
- Return casseroles in pan(s) to oven and continue to bake until egg yolks are set to your liking (about 15 more minutes for firm but moist yolks).
- Garnish each casserole with an onion.
- Serve with tortillas; add salsa and pepper to taste.
