Recipe: Mexican Smoked Sausage Skillet

Ingredients
- 1 medium onion
- 1 tablespoon cooking oil
- 1 16-ounce can tomatoes
- 1 4-ounce can diced green chili peppers
- 1 15-ounce can pinto beans
- 1 cup water
- 2/3 cup long grain rice
- 1 teaspoon chili powder
- 1 5-ounce package small smoked sausage links or 4 fully cooked smoked sausage links, cut into 16 pieces
- 1 cup shredded cheddar cheese (4 ounces)
Instructions
- Chop onion
- In at 10-inch skillet cook onion in hot oil until tender but not brown
- Cut up tomatoes.
- Drain chili peppers.
- Add undrained tomatoes, chili peppers, undrained beans, water and uncooked rice to the skillet.
- Stir in chili powder.
- Bring to boil.
- Reduce heat to medium low, then simmer , covered, 15 minutes or till rice is nearly tender.
- Stir rice mixture thoroughly.
- Arrange sausage pieces atop mixture.
- Simmer, covered, 5 minutes more or until sausages are heated through and rice is tender.
- Sprinkle cheese over the mixture in the skillet.
- Cover and cook about 2 minutes mor or until cheese is almost melted.
