Recipe: Skillet Tamale Pie


  • 1 onion, chopped

  • 1 pound ground beef
  • 1 (16 ounce) can stewed tomatoes
  • 1 (17 ounce) can corn, undrained
  • 1 cup sour cream
  • 1 (4.5 ounce) can olives, sliced
  • 1 cup corn meal
  • 2 teaspoons salt
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin (optional)
  • 2 cups Monterey jack cheese, shredded


  1. Using a 10″ or 12″ skillet with lid, brown beef with onion; drain excess grease.
  2. Add tomatoes, corn with liquid, sour cream, corn meal, olives and seasonings.
  3. Stir until thoroughly mixed.
  4. Cover and simmer 20 minutes.
  5. Sprinkle with shredded cheese and serve.
