Ingredients

  • Filling:
  • 6 ancho chiles
  • 1 – 3 1/2 to 4-pound chicken
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 3 large tomatoes, peeled, seeded, and chopped

  • 1/4 cup blanched almonds
  • 1/2 cup raisins
  • 2 tablespoons lard or salad oil
  • Salt
  • Freshly ground pepper
  • Dough:
  • 1/2 cup light cream
  • 1/2 cup lard
  • 1/2 cup chicken broth, or canned condensed broth
  • 3 cups masa harina
  • 1 teaspoon baking powder
  • Pinch salt

Instructions

  1. Filling:
  2. Prepare chiles in boiling salted water for 5 minutes; then drain.
  3. Place the chicken in a heavy kettle that has a lid, and barely cover with cold water.
  4. Bring to a boil; cover; then simmer until tender when pierced with a fork.
  5. Lift out of the liquid and, when cool enough to handle, strip the meat off the bones.
  6. Discard skin, bones, and fat.
  7. Cut the meat into fairly large pieces.
  8. Set aside.
  9. Combine the onion, garlic, tomatoes, almonds, raisins, and the prepared chiles in the electric blender, and blend, a small quantity at a time, to a coarse puree.
  10. Heat the lath in a skillet; add the puree; and cook, stirring constantly, over a moderate heat, for 5 minutes.
  11. Season to taste.
  12. Dough:
  13. Cream the lard until it is very light and fluffy.
  14. Mix the dry ingredients together, and add to lard.
  15. Add the chicken broth and cream, and beat until the dough is so light a little ball will float on the top of a glass of water.
  16. Grease a 2-quart casserole, and line the sides and bottom with a layer of the dough.
  17. Arrange the chicken pieces in the center, add half the sauce, and cover with the remaining dough.
  18. Place in a preheated 350°F. oven and bake for 1 hour.
  19. Serve with the remaining sauce, heated.
