Recipe: Chicken Con Rajas

Ingredients

  • 8 whole chicken breasts, boned and skinned
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

  • 1/4 cup butter
  • 1/4 cup oil
  • 2 large onions, peeled and thinly sliced
  • 8 ounces whole green chiles
  • 1/2 cup Salsa of Choice
  • 3/4 cup milk
  • 1 pint sour cream
  • 1 cup grated Cheddar cheese
  • 1 cup grated Monterey jack cheese

Instructions

  1. Cut the boned chicken breasts in half and season with 1 teaspoon salt and the pepper.
  2. Melt the butter and oil in a 10-12-inch skillet and saute the chicken breasts lightly over moderate heat for 3-4 minutes on each side or until they are lightly browned.
  3. Remove the chicken from the pan.
  4. In the same pan saute the onion for 5 minutes until soft but not browned.
  5. Slice the chiles into long strips and add 1/2 of them to the pan with the onion.
  6. Add the Mexican Salsa and cook over a low flame for 8—to-10 minutes or until the sauce is thickened slightly.
  7. Meanwhile, place the remaining sliced chiles in the blender with the milk and 1/2 teaspoon salt.
  8. Blend at low speed until smooth.
  9. Add the sour cream and blend again.
  10. Place 1/2 the chicken breasts on the bottom of a 2-quart casserole.
  11. Cover them with 1/2 the onion-chile mixture and 1/2 the sour cream sauce.
  12. Repeat the layers.
  13. Mix the grated cheeses together and sprinkle on top of the chicken mixture.
  14. Bake uncovered in a preheated 350° oven for 30 minutes.
  15. Serve directly from the casserole.
  16. Serves 8
