Recipe: Chicken Esteban

Summary: Delicious Chicken for Dinner or Lunch.

Ingredients

  • 4 cups tortilla chips
  • 1 chicken (3 to 3 1/2 pounds), cut into pieces
  • 1/4 cup butter or margarine, melted
  • 1 package (l-l/4 ounces) taco seasoning mix

  • 2 to 3 cups shredded iceberg lettuce
  • 1/2 cup sour cream
  • 1 medium avocado
  • 1 lemon, cut into wedges
  • Green chili salsa

Instructions

  1. Preheat oven to 350°F Place tortilla chips in food processor container fitted with metal blade; process to make coarse crumbs.
  2. (Or place chips in heavy plastic bag; crush with rolling pin. )
  3. Place crumbs on large plate.
  4. Rinse chicken and pat dry.
  5. Combine butter and seasoning mix in pie plate.
  6. Roll each piece of chicken in butter mixture, then coat with crumbs.
  7. Arrange chicken pieces, skin side up, slightly apart in 13 X 9-inch baking pan.
  8. Bake, uncovered, 1 hour or until meat near thigh bone is no longer pink when slashed.
  9. Arrange chicken on bed of shredded lettuce; top with sour cream.
  10. Peel, pit and slice avocado.
  11. Garnish chicken with avocado and lemon wedges.
  12. Serve with salsa.
