Recipe: Mexican Stuffed Chicken

Summary: Mexican Stuffed Chicken Served With Salsa and Warm Tortillas

Ingredients

  • 1 whole fryer, ready to stuff.
  • Stuffing
  • 1 to 3/4 lb. lean ground chuck (depending on size of chicken)

  • 2 Tbsp. potatoes, finely chopped
  • 1 small clove garlic, crushed
  • 2 Tbsp. carrots, finely chopped
  • 2 Tbsp. frozen peas
  • 1 tsp. onion, finely chopped
  • salt

Instructions

  1. Mix stuffing ingredients together with the exception of the frozen peas.
  2. Brown stuffing mix in a skillet to remove any redness from the meat.
  3. Add peas.
  4. Drain fat and stuff chicken with the mixture.
  5. Butter top of the chicken lightly, then salt.
  6. Place stuffed chicken in foil and wrap, first one way; then the other way with another piece of foil.
  7. Place chicken in glass dish.
  8. Bake at 400° for 1 hour.
  9. Then bake for an additional 1-1/2 to 2 hours at 350°.
  10. Test chicken for doneness by poking top of breast with a fork.
  11. Serve for dinner with sliced cooked potatoes, carrots, salsa and warm tortillas.
  12. Serves 4 to 5.
