Ingredients

  • 3 tablespoons butter
  • 3 tablespoons oil
  • 2 – 2 1/2 to 3-pound frying chickens, cut in pieces, washed and patted dry

  • 1 1/2 teaspoons salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 2 medium onions, thinly sliced
  • 3 cloves garlic, crushed
  • 3 large stalks celery, chopped
  • 5 small tomatoes, peeled and coarsely chopped
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried marjoram
  • 2 tablespoons flour
  • 2 tablespoons butter, softened
  • 1/2-3/4 cup dry white wine
  • 1 pound seedless grapes, halved

Instructions

  1. Heat the 3 tablespoons butter and the oil in a 3-quart flameproof casserole.
  2. Season the chicken with 1/2 teaspoon salt and the pepper and add to the casserole.
  3. Saute over moderate heat 8—10 minutes, turning chicken once.
  4. Remove from the pan and set aside.
  5. In same oil, sauté onion, garlic, and celery over moderately high heat for 5-7 minutes or until limp, stirring frequently.
  6. Add the chopped tomatoes, thyme, marjoram, and teaspoon salt, stirring to blend.
  7. Place the chicken in the tomato mixture, cover, and bake in a preheated 350 oven for 25-30 minutes.
  8. Remove chicken from sauce and place on a serving platter.
  9. Remove vegetable pieces with a slotted spoon and spoon over chicken pieces.
  10. Set aside and keep warm.
  11. Deglaze the juices in the pan.
  12. In a small cup blend the flour and 2 tablespoons butter together to form a paste (buerre manie).
  13. Heat the juices over medium heat and add the beurre manie, stirring constantly, until blended and slightly thickened.
  14. Add the wine and simmer over low heat for io minutes.
  15. Add the grapes and simmer an additional 5 minutes.
  16. Spoon the hot sauce over the chicken and serve at once.
  17. Serves 8
