Pollo en Adobo – Chicken in Adobo Sauce

Recipe: Pollo en Adobo – Chicken in Adobo Sauce

Summary: Adobo in Spanish is a pickle sauce, but it is used in Mexico to mean a very thick chile sauce which usually, though not always, contains a little vinegar.

Ingredients

  • 6 ancho chiles
  • 4 tablespoons lard or salad oil

  • 2 2-1/2 Pound broiler-fryers, cut into serving pieces
  • 1 large onion, chopped
  • 1 clove garlic, chopped
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon ground coriander seed
  • 1 large tomato, peeled, seeded, and chopped
  • 1 teaspoon sugar
  • 1 tablespoon white vinegar
  • 2 cups chicken stock, or canned condensed broth
  • Salt
  • Freshly ground pepper

Instructions

  1. Adobo means in Spanish a pickle sauce, but it is used in Mexico to mean a very thick chile sauce which usually, though not always, contains a little vinegar.
  2. The Adobe itself varies from recipe to recipe.
  3. Prepare the chiles as described in the Introduction.
  4. Heat the lard in a large skillet, and sauté the chicken pieces, a few at a time, until golden.
  5. Remove to a heavy, flameproof casserole that has a lid.
  6. Combine the onion, garlic, cloves, cinnamon, coriander, tomato, prepared chiles, salt and pepper to taste, sugar, vinegar, and a little stock in the electric blender, and blend, a small amount at a time, to a coarse puree.
  7. Cook the mixture in the oil remaining in the skillet for 5 minutes, stirring constantly.
  8. Add the stock and pour over the chicken pieces.
  9. Cover, and simmer for about 1 hour, or until the chicken is tender when pierced with a fork.
  10. Remove the casserole lid for the final 15 minutes of cooking.
  11. The sauce should be very thick, almost coating the meat.
  12. Serve with lettuce, olives, capers, avocado slices, and serrano chiles on the side.
