Ingredients

  • 8 pobalno chiles (No Prep Necessary if using Canned)
  • 2 2-1/2 Pound broiler-flyers, cut into serving pieces

  • 2 cups chicken stock, or canned condensed broth
  • 1 cup pepitas
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1 large onion, chopped
  • 1 clove garlic, chopped
  • 2 10-ounce cans Mexican green tomatoes
  • 2 tablespoons lard or salad oil
  • Handful of fresh coriander
  • Salt
  • Freshly ground pepper

Instructions

  1. Prepare the chiles as desired.
  2. Place the chicken pieces in a flameproof casserole which has a lid, and add the stock.
  3. Bring to a boil, reduce heat, cover and simmer until almost tender—about 45 minutes.
  4. Drain; reserve the stock and keep the chicken warm.
  5. Pulverize the pepitas in the electric blender as finely as possible.
  6. For the best results, do 1/2 cup at a time Set aside.
  7. Combine the walnuts, almonds, onion, garlic, green tomatoes and the liquid from the can, coriander, and the prepared chiles, and reduce in the electric blender, bit by bit, to a coarse puree.
  8. Stir in the pepitas.
  9. Season to taste with salt and pepper.
  10. Heat the lard in a large skillet and cook in the sauce for 2 or 3 minutes, stirring constantly.
  11. Thin to the consistency of heavy cream with the reserved chicken stock.
  12. Pour the sauce over the chicken in the casserole; cover, and cook over the lowest possible heat until the chicken is tender when pierced with a fork, without allowing the sauce to boil—about 15 minutes.


Variations

Mole Verde can also be made with turkey, or with bone-less loin of pork cut into 2-inch chunks; and pecans may be substituted for walnuts.
