Recipe: Mexican Doughnuts

Ingredients

  • 2 cups all-purpose flour, presifted

  • 1/4 cup sugar
  • 1 1/2 tsp. baking powder
  • 2 Tbsp. shortening or lard
  • 1/4 tsp. salt
  • 3/4 cup cold water

Instructions

  1. Sift all dry ingredients together.
  2. Then cut in the shortening or lard.
  3. Add cold water slowly so as to form a pastry dough.
  4. Knead for 2 to 3 minutes.
  5. Place in covered bowl in refrigerator for 15 to 20 minutes.
  6. Then place dough on floured board and roll out 1/4-inch thick.
  7. Cut into 2 inch or 3 inch squares and drop into 350° to 375° oil.
  8. Press lightly with fork to make them puff up.
  9. Fry until a light golden brown on both sides.
  10. Drain on paper towels and sprinkle with sugar and cinnamon or spoon on caramel.
  11. Serve warm.
  12. Makes 1 or 2 dozen, depending on the size of the squares.
