Recipe: Mexican Sheet Cake

Ingredients

  • 1 cup margarine
  • 1 cup water
  • 4 tablespoons cocoa

  • 2 cups sugar
  • 2 cups sifted all-purpose flour
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • FROSTING:
  • 1/2 cup margarine
  • 6 tablespoons milk
  • 5 tablespoons cocoa
  • 1 16-ounce box powdered sugar
  • 1 teaspoon vanilla
  • 1 cup chopped nuts

Instructions

  1. Bring first 3 ingredients to a boil; combine with sugar and flour and mix.
  2. Add eggs one at a time.
  3. Stir baking soda into buttermilk and add to mixed ingredients.
  4. Stir in vanilla and cinnamon.
  5. Bake at 400° for 18 minutes in 15 x 10 x 1-inch pan.
  6. Four minutes after cake is in oven, prepare frosting.
  7. Melt margarine; add milk and cocoa.
  8. Pour over powdered sugar.
  9. Add vanilla and nuts and mix.
  10. Frost while cake is hot.
  11. Serves: 15
