Ingredients

  • 1 Can (10 oz.) Rotel Diced Tomatoes and Green Chilies, drained; reserve juice.
  • 1 Can (16 oz.) Traditional Refried Beans
  • 1 Container (12 oz.) refrigerated prepared guacamole
  • 1 Tub (16 oz.) Sour Cream
  • 1 Package (1.25 oz.) Taco Seasoning Mix
  • 1 Cup Shredded Cheddar and Monterey Jack Cheese Blend
  • 1 Can (2.25 oz.) Sliced Ripe Olives, Drained
  • 1/4 Cup Sliced Green Onions
  • Tortilla Chips

Instructions

  1. Reserve 1/2 cup drained tomatoes; set aside.
  2. Blend remaining tomatoes and reserved juice with beans in a small bowl.
  3. Spread bean-tomato mixture into 8×8-inch baking dish or round casserole dish.
  4. Top with guacamole.
  5. Blend sour cream and taco seasoning mix together in a small bowl.
  6. Spread over guacamole.
  7. Top evenly with layers of cheese, olives, green onions and reserved tomatoes.
  8. Chill for 2 hours prior to serving.
  9. Serve with tortilla chips.
