Recipe: Mexican Chicken Filling

Summary: This filling can also be used for other Mexican Recipes like Tacos, Burritos or Empanaditas


  • 2 teaspoons butter or margarine
  • 1/2 cup finely chopped onion
  • 1 cup finely chopped cooked chicken
  • 2 tablespoons canned diced green chilies
  • 2 teaspoons capers, drained and coarsely chopped
  • 1/4 teaspoon salt
  • 1/2 cup (2 ounces) shredded Monterey Jack cheese


  1. Melt butter in medium skillet over medium heat.
  2. Add onion; cook until tender.
  3. Stir in chicken, chilies, capers and salt; cook 1 minute.
  4. Remove from heat and let cool; stir in cheese.
