Recipe: Southwest Chicken Filling


  • 1 onion, finely chopped
  • 2 cups diced cooked chicken
  • 1 small clove garlic, minced
  • 6 tablespoons vegetable oil
  • 1 can frozen guacamole or 1 cup fresh guacamole
  • 1 4-ounce can chopped green chiles, drained
  • 1 teaspoon salt
  • 1/2 teaspoon marjoram
  • 1 14 1/2-ounce can whole tomatoes, drained


  1. Sauté onion and garlic in oil until soft.
  2. Add chiles, salt, marjoram and tomatoes.
  3. Break up tomatoes and cook mixture gently 10 minutes.
  4. Add chicken and cook slowly about 10 minutes or until chicken is heated thoroughly.
  5. Drain chicken mixture before serving
