Recipe: Tasty Taco Filler

Summary: This Tasty Filler can also be Used in Burritos, Tostadas or Other Mexican Recipes


  • 1 onion
  • 2 cloves garlic
  • 1 can (16 ounces) black beans or red kidney beans
  • 2 tablespoons vegetable or olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 package (10 ounces) frozen corn kernels, thawed

  • 1 can (4 ounces) chopped green chilies
  • 3/4 cup spaghetti sauce
  • Salt and freshly ground black pepper


  1. Mince the onion and the garlic.
  2. Rinse and drain the beans.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and garlic and sauté until tender, about 5 minutes.
  5. Add the beans, chili powder, oregano, corn, and green chilies; sauté for a couple of minutes just to heat them through.
  6. Add the spaghetti sauce and season to taste with salt and pepper.
  7. Cover the skillet and simmer over medium-low heat for 10 to 15 minutes to heat the filling through and blend the flavors.
  8. The filling is now ready to be used or reheated later.
  9. Makes 3 Cups of Taco Filling
