Chicken Chalupas

Recipe: Chicken Chalupas


  • 1 (2 pound) chicken
  • 1 small onion

  • 1 clove garlic
  • 1 pint sour cream
  • Oil for frying
  • 1/2 green pepper, diced
  • 1 can roasted green chilies, diced
  • 1 pound cheddar cheese, grated
  • 1/4 teaspoon paprika
  • 16- 18 corn tortillas
  • Salt, to taste


  1. Boil chicken until tender, reserving some broth.
  2. Remove bones and cut into bite-sized pieces.
  3. Grate onion and garlic into sour cream.
  4. Add salt and some broth to thin sour cream.
  5. Soften tortillas by dipping in hot oil and drain on paper towels.
  6. Fill each tortilla with chicken, peppers, chilies and cheese (reserving 1 cup cheese for topping), place in a flat pan, seam side down.
  7. Pour sour cream mixture over top, sprinkle remaining cheese and paprika on top and refrigerate for 8 hours.
  8. Bake at 350 degrees for 1 hour. (This can also be frozen and baked later – thaw before baking.)
  9. Serves 10 – 12
