Recipe: Chilaquiles

Ingredients

  • 1 pound ground meat
  • 1 dozen corn tortillas
  • 2 8-ounce cans tomato sauce or 2 1/2 cups canned tomatoes
  • Vegetable oil

  • 2 medium onions, diced
  • 1 teaspoon salt
  • 2 large cloves garlic, minced
  • 2 tablespoons red chile powder
  • 1 large bell pepper, diced
  • Shredded cheese
  • 2 tablespoons vegetable oil
  • Ripe olives, sliced

Instructions

  1. Cut tortillas into 1-inch squares; fry in oil until light brown; drain.
  2. Sauté onions, garlic and bell pepper in 2 tablespoons oil, stirring often.
  3. Add ground meat, stirring until meat is well done.
  4. Add tomato sauce, tortillas, salt and chile powder.
  5. Simmer 30 minutes, stirring occasionally.
  6. Pour into 2-quart casserole and sprinkle with shredded cheese.
  7. Bake 20 minutes at 350° or until cheese melts.
  8. Top with sliced olives.
  9. This recipe may be frozen.
  10. Thaw at room temperature and heat.
  11. Serves: 6
