Recipe: Mexican Baked Potatoes

Summary: Good with any meal, Breakfast, Lunch or Dinner!


  • 6 large baked potatoes, halved, pulp removed and mashed
  • 1/2 cup butter, softened
  • 1 cup sour cream
  • 1 4-ounce can chopped green chiles, drained

  • 3 hard cooked eggs, chopped
  • Shredded Longhorn cheese
  • Salt to taste


  1. Mix mashed potatoes, chiles, chopped eggs, butter, sour cream and salt.
  2. Fill shells with mixture.
  3. Top each potato with shredded cheese and heat in oven at 400° for 15 minutes.
  4. Serves: 6
