Recipe: Two Cheese Tortilla Pizza

Summary: Easy to Make Mexican Pizza Using Mozzarella and Cheddar Cheese


  • 4 (6-Inch) flour tortillas
  • 1/4 cup chopped red onion
  • 1 Tbsp. butter, melted
  • 1/2 cup shredded reduced fat Mozzarella cheese
  • 1/2 cup chunky-style medium salsa
  • 1/2 cup chopped green peppers
  • 1/4 cup shredded sharp Cheddar cheese
  • 1/2 cup frozen corn kernels, thawed


  1. Preheat oven to 350°
  2. Place tortillas on ungreased baking sheet
  3. Brush with butter
  4. Bake until crisp, 5 to 6 minutes.
  5. Remove baking sheet from oven.
  6. Spread each tortilla equally with salsa
  7. Top with green pepper, corn and red onion
  8. Sprinkle with Mozzarella and Cheddar cheeses
  9. Bake until Cheddar melts (about 5 minutes)
  10. Serve hot
