Recipe: Arroz Con Camaron – Rice with Shrimp

Ingredients

  • 1 garlic clove

  • 1/4 cup oil
  • 2 cups uncooked rice
  • 1/4 cup chopped onion
  • 1/2 cup tomato sauce
  • 1/2 pound cooked shrimp
  • 1/4 teaspoon Spanish saffron
  • Salt and pepper to taste
  • 1 1/2 cup water

Instructions

  1. Sauté garlic in oil until it reaches a golden color.
  2. Discard garlic.
  3. Sauté rice in oil until brown.
  4. Add onion, tomato sauce, shrimp, saffron, salt and pepper, and water, adjusting the amount of water to the amount required on the rice package.
  5. Cover and simmer 30 minutes or until all liquid has been absorbed.
  6. Yields 6 to 8 sewings of Arroz con Camaron.
