Recipe: Cheesy Bacon Mexican Rice

Ingredients
- 4 slices bacon
- 1 cup onion, chopped
- 1/2 cup green pepper, diced
- 1 (16 ounce) can tomatoes, chopped
- 1 (8 ounce) can tomato sauce
- 1 teaspoon salt
- 1 1/2 cups long grain rice, uncooked
- 1/2 cup cheddar cheese, shredded
- Water
Instructions
- Fry bacon until crispy.
- Remove from pan, drain and crumble into pieces.
- Preheat oven to 350 degrees.
- In bacon drippings, cook onion and green pepper until tender.
- Drain tomatoes, reserving liquid.
- Add enough water to the liquid to make 1 3/4 cups.
- Add liquid, tomatoes, tomato sauce and salt to onion mixture.
- Heat to boiling.
- Stir in rice.
- Remove from heat and pour into greased 1-1/2 quart casserole.
- Cover and bake at 350 degrees for 35 minutes or until rice is tender and liquid is absorbed.
- Fluff rice with fork; sprinkle with cheese and bake 5 minutes more.
- Garnish with bacon.
