Recipe: Cheesy Bacon Mexican Rice

Summary: Delicious Bacon, Cheese and Rice Mix

Ingredients

  • 4 slices bacon
  • 1 cup onion, chopped

  • 1/2 cup green pepper, diced
  • 1 (16 ounce) can tomatoes, chopped
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon salt
  • 1 1/2 cups long grain rice, uncooked
  • 1/2 cup cheddar cheese, shredded
  • Water

Instructions

  1. Fry bacon until crispy.
  2. Remove from pan, drain and crumble into pieces.
  3. Preheat oven to 350 degrees.
  4. In bacon drippings, cook onion and green pepper until tender.
  5. Drain tomatoes, reserving liquid.
  6. Add enough water to the liquid to make 1 3/4 cups.
  7. Add liquid, tomatoes, tomato sauce and salt to onion mixture.
  8. Heat to boiling.
  9. Stir in rice.
  10. Remove from heat and pour into greased 1-1/2 quart casserole.
  11. Cover and bake at 350 degrees for 35 minutes or until rice is tender and liquid is absorbed.
  12. Fluff rice with fork; sprinkle with cheese and bake 5 minutes more.
  13. Garnish with bacon.
