Recipe: Garlic Shrimp with Rice

Ingredients
- 2 teaspoons butter or margarine
- 2 teaspoons olive oil
- 3 cloves garlic, minced or pressed
- 3 tablespoons water
- 1 pound large shrimp (about 25 per lb.), shelled and deveined
- About 4 cups hot cooked rice
- 3 tablespoons chopped parsley
- Salt and pepper
- Lemon wedges
Instructions
- Melt butter in a wide nonstick frying pan over medium-high heat.
- Add oil, garlic, water, and shrimp.
- Cook, stirring, until shrimp are just opaque but still moist in center; cut to test (3 to 4 minutes).
- To serve, spoon rice onto a platter or four dinner plates; spoon shrimp and pan juices over rice.
- Sprinkle with parsley.
- Season to taste with salt and pepper, then serve with lemon wedges.
